Can anyone tell me why almost all flights take off to the north but just occasionally during the day,one will take off to the south. What would the reason be for this ?

It's most probably Aer Lingus

Aircraft usually take off into the wind as they get more lift.

And the wind is almost always from that direction - the famous NE trade winds.
