How do you know when a work contract is genniune or not?...

You need to have a copy of the contract, it states hours worked (not necessarily true hours) ie may state 10 when you actually work 48.
Should (I believe) contain your NIF number, so you can go to Arrecife and check with the local social security office that your taxes and social funds are being paid by your employer etc.

An employer will have the full correct info for you.
