There’s got to be loads of places, depends whether you’d prefer to just be in a particular setting or does it really need to be a restaurant etc ?
For restaurants it’d probably depend which resort you’re staying in although there are some out of town restaurants which may fit the bill (e.g. La Era

http://www.lag-o-mar.com/ in Nazaret). Café La Ola in PDC is quite a good spot as well. Or maybe one of the restaurants by the beach and rocks in El Golfo, or a restaurant by the Puerto Calero marina.
Mirador Del Rio might offer the best setting in terms of views, Femes also has spectacular views over the south of the island. Or maybe strolling through the surf in splendid isolation along the Famara beach with the cliffs in the background ? Or San Gabriel castle in Areciffe (

Best fit for your parameters of “romantic, unusual, chilled and reasonably private” might be Famara beach.
